DESTIHL Brewery Releases Wild Sour Series “Synchopathic” in Cans

DESTIHL’s new beer in the Series, a dry-hopped sour, being released this month.

DESTIHL® Brewery, of Bloomington, Illinois officially announced today that it is now releasing its latest canned sour beer in its popular Wild Sour Series: a dry-hopped sour ale called SynchopathicTM.  DESTIHL brewed the beer for the first time in January as a draft-only release, but the first canned batch was packaged last week and will be hitting markets soon.

At 6% ABV, Synchopathic is the cool harmonization of a refreshingly tart and acidic sour ale with citrusy, fruity & floral dry-hops normally in concert with pale ales, with totally rad aromas and flavors reminiscent of grapefruit, orange, lemon, tangerine, pineapple and hints of pine, giving way to a biscuity-crackery malt back beat, low bitterness and a dry finish to bring everything in synch.

In late 2014, DESTIHL released its pioneering, award-winning Wild Sour Series in 4-packs of 12 oz. cans for the first time.  This Series, which now represents the majority of the brewery’s production volume, includes a line of bold kettle sours DESTIHL produces with its own wild mixed-culture indigenous to the central Illinois brewery.  Other canned beers in the Wild Sour Series include Here Gose Nothin’®, Counter ClockWeisse®, Flanders Red and Lynnbrook® Raspberry Sour Ale).  There are also draft-only beers in the Series, including Plum Sour Stout, Kriek, Sour Cherry Stout, Synchopathic Apricot, Smoked Gose, Blueberry Gose and Adambier.

In February, DESTIHL announced plans to build its new 47,000sf production facility this year in Normal, Illinois.  DESTIHL broke ground on that facility in mid-June, with an opening slated for early 2017.  The new, one-of-a-kind brewhouse (being built by Sprinkman) will consist of a 60-barrel conventional brewhouse, a 10-barrel pilot system for the brewery’s experimental beers and a 240-barrel sour kettle brewhouse that is readily expandable to 360 barrels of kettle souring capacity.   “Building the new production brewery will enable us to greatly increase production of our Wild Sour Series and other beers in our portfolio so that we can keep up with demand”, said DESTIHL’s Founder, Brewmaster and CEO, Matt Potts.

DESTIHL opened its first gastrobrewpubTM (DESTIHL Restaurant & Brew Works) in Normal, Illinois, in November 2007 and added its second gastrobrewpub in downtown Champaign, Illinois, in April 2011, where the company focuses on both artisan food and beers.  The company’s current production brewery in Bloomington, IL commenced operations on May 31, 2013, although the brewery will be moving into a new 47,000sf production facility, taproom and beer hall early next year.  DESTIHL has earned multiple awards, including Great American Beer Festival® (GABF) medals and Best of Show at the 2015 National Wood-Aged Beer Competition held at the Festival of Barrel Aged Beers (FoBAB) in Chicago for its Dosvidanya® Russian Imperial Stout (aged in bourbon barrels).  DESTIHL’s sour program began several years ago in 2008 with its barrel-aged Saint Dekkera® Reserve Sour Ales, which have also won several awards, and it was that brand that eventually inspired the brewery to embark on a new line of kettle sour beers known as the Wild Sour Series.

DESTIHL Brewery combines centuries-old, global brewing traditions and new American craft brewing ingenuity & artisanship to produce a wide array of beers for every palate.  The result is a diverse offering of intensely flavorful beers that are anything but bland.  The brewery currently distributes its beers in Illinois, Arizona, Colorado, Texas, Wisconsin, Iowa, Indiana, Michigan, Minnesota, Louisiana, Ohio, Florida, Pennsylvania, North Carolina, Nebraska, Oklahoma and beginning this month, also Missouri.
